We asked restaurateur and caterer Jesse Cool (Flea St. Cafe, Cool Cafe @ Stanford, Cool Cafe @ MPB) if she had a favorite day after Thanksgiving recipe. She replied: “This is a sandwich we used to feature but it got lost in the days gone by.” Our take: It couldn’t be simpler to put together and gobbles up leftovers:

Organic white bread – two slices
Gravy – on one side of the bread
Turkey – to cover the gravy
Cranberry sauce – plenty on top
Stuffing – as much as you want
Mashed potatoes – as much as you want
Mayonnaise – on the other side of the bread
Salt and pepper to taste
